Watermelon Margaritas Recipe

This is the time most people start to think of Fall (hello, August), but for us, our melons are just getting ripe in the garden. I notice cans of pumpkin in people’s grocery carts, but we’re over here with melons stacked on our counter. My birthday is in late September, and that is when I choose to start embracing pumpkin. August has always been, and will always be, for the watermelons! While I’m fairly confident my kids could devour an entire melon in a day, I have to limit the watermelon consumption after 2pm, if you know what I mean. I don’t like to start my mornings washing sheets–now you know what I mean, hah!

Cocktails for two

However, when the kids go to bed, we love to make a batch of watermelon margaritas for the adults! I usually make the simple syrup earlier in the day so it can chill. Simple syrup is just equal parts sugar and water, boiled briefly to dissolve the sugar, and then cooled. We use simple syrup in cocktails because granulated sugar doesn’t dissolve in cold liquids. While honey and maple syrup are convenient, they impart a taste in the final cocktail, in my opinion. However, if you want to skip the simple syrup, reach for agave and never look back! Choose whatever kind of tequila you like–we reach for a local one, if possible. I like a white clear tequila so that it doesn’t interfere with the melon flavors. I’m trying so hard to warm up to mezcal, but unfortunately, I just don’t love the smokiness. My husband loves it, though! This watermelon margarita recipe makes enough for 2 margaritas, but feel free to double or triple it for a crowd.

For frozen watermelon margaritas:

If you would like a frozen watermelon margarita, place the watermelon cubes in the freezer for a few hours beforehand! Then, when you’re blending, make sure everything else is super cold (including the tequila), and blend just until things come together. A handful of ice is great added at the end, if you like them super slushy! Speaking of slushy, have you seen my peach jalapeño margaritas? They’re super cold and slushy! One morning, after making these the night before, my daughter saw the leftover watermelon juice in the fridge and asked if she could try it.
