I’m not really a cracker person. I think maybe it’s because I’m not really a cheese person. Apparently they go really well together. I like cheese when it’s stirred into something, or melted on top of something, but I don’t like cold cheese. Anyone else with me? I don’t know what it is about cold cheese. But heck, on a pizza, or lasagna? Load it up. The more the better. My mom used to make these pizza crackers for our birthdays every year. I remember they were always a big hit with our friends. And why not? Spicy pepperoni, sweet tomato sauce and gooey cheese. Isn’t that what kids are all about? I don’t know if I’d ever made these myself before my daughter’s second birthday. I guess I had always connected them to childhood birthdays, and it’s been a long time since I had a childhood birthday. But now I have a kid. And when I was figuring out what I was going to make for her birthday party I thought of these right away: (a) because they’re delicious and (b) because it’s tradition! So whether you’re celebrating a birthday or not, and whether you’re over the age of 12 or not, these are such a perfect snack! You could pair them with a spread of fruits and veg and call them lunch, too.
