Peanut Butter Rice Krispie Treats
Well, the time has come to introduce Camille to rice crispy treats. I realized this the other day when she was eating an unsalted dry rice cake and referred to it as a ‘rice krispies treat.’ It was like a slap in the face as a parent. My kid actually thought a rice crispy treat was an unsalted rice cake/ hockey puck spread with all-natural sugar-free peanut butter infused with flax seed. Someone lock me up. I’m clearly an unfit parent, and am ruining this kid’s life. The even sadder part is that I make peanut butter rice krispies treats all the time, but I eat them in the pantry while hiding from her.
So, I pulled out the marshmallows and began to make my small batch of rice krispie treats. But, being the mother that I am, I had to include some kind of healthy thing in there. It’s just who I am. So, I plopped in some peanut butter for protein, you know? I don’t know why I never thought of this before, but DANG, peanut butter in rice krispies treats is incredible. Camille tasted her first real rice crispy treat, and now I know she’ll never go back to the other version. It’s okay, childhood is for marshmallows and nutritionally devoid cereal, right? As a child of the 80s, I’ve had my fair share of both–it’s safe to say. Sometimes, I add sprinkles on top for her, because nothing says love like sprinkles to a toddler. I typically hand her a small ramekin with sprinkles instead of giving her the entire sprinkles jar, otherwise they quickly turn into sprinkles treats!
Ingredients
Butter. Unsalted or salted butter works, no real difference here because we’re only using 2 tablespoons. Peanut Butter. The best peanut butter to use is a regular, plain peanut butter. I don’t like the ones that require stirring, or ones that have oil separated out on the surface. Regular, plain peanut butter is what you’re looking for. Marshmallows. You can use mini marshmallows or regular large marshmallows. You need 5 ounces total, which is 22 big marshmallows or 2 ½ cups of minis. If you’re new around here, I make small batch desserts; you probably knew this though, right. I made these peanut butter rice krispie treats in a 9" bread loaf pan. You can slice them into 3 thick bars or 4 pieces, either way, and you still don’t have an entire tray of them on your counter tempting you. Personally, in my house, we cut these bars in two and each of us enjoys a giant bakery-sized rice krispies treat. However, you can absolutely DOUBLE THIS RECIPE and make it in an 8" square baking pan, the same pan you use for brownies and blondies.
Are peanut butter Rice Krispie treats healthy?
Um, well, in my opinion, no. There is protein in the peanut butter, but they contain a lot of sugar. However, this recipe is small portion, so you’ll have less tempting dessert to eat.
Can I add a chocolate ganache on top?
