Honey Mustard Chicken Thighs
These honey mustard chicken thighs are marinated in a punchy mustard sauce with the sweetness of honey and onion powder. Before being baked, they’re wrapped in bacon. They’re exactly as delicious as they sound, and this is what I make for my kids when they say they want take-out food.
Honey Garlic Chicken Thighs
Honey mustard chicken thighs is my favorite thing to do with a pack of chicken. After cutting the chicken into pieces, it’s coated in cornstarch, egg, and then quick-fried in a shallow pan. The sweet garlicky sauce is then baked onto the crust, resulting in a dinner that rivals any take-out meal!
Apricot Chicken
Apricot chicken is very similar to my Honey Garlic chicken, because the chicken thigh pieces are coated in cornstarch and egg before a quick pan-fry, but the sauce is made with a jar of apricot preserves. Totally kid-friendly and simple to make!
Instant Pot Teriyaki Chicken
There are a lot of teriyaki chicken recipes out there, but this is one is the BEST for so many reasons. The chunks of chicken thigh meat becomes soft and velvety in the instant pot, and the sauce is perfectly balanced. I make this dinner for two at least one night a week.
Chicken Cacciatore Recipe
The sauce in this chicken cacciatore recipe is made of wine, tomatoes, red peppers, capers, and herbs. It’s heaven, and I love the way my house smells when I make it. Searing bone-in and skin-on chicken thighs to soak and cook in this sauce is something I make for date night at home.
Rosemary Lemon Chicken
If you’re new to a pack of bone-in, skin-on chicken thighs, start with this rosemary lemon chicken recipe. The thighs are marinated in lemon juice, olive oil, and rosemary before being seared and baked. The bone helps keep the chicken moist, and the seared lemon slices give it so much smoky, acidic flavor.
Instant Pot Butter Chicken
This instant pot butter chicken is one of the first ‘meals’ I made in my instant pot mini. Before this, I just made beans and stock in it (more on that later). This smoky spicy and creamy chicken dish is something you have to make to believe it. Speaking of, check out all of my instant pot mini recipes here.
Chicken and Dumplings for Two
Cozy and comforting chicken and dumplings is even better when made with chicken thighs. My recipe has cornmeal dumplings and fresh herbs, and I know you’ll love it as much as we do.
Homemade Chicken Stock
The first time I ever pressure cooked anything, it was homemade chicken stock. I love the stuff–it elevates any dish that calls for it. Over the years, I keep going back to bone-in, skin-on chicken thighs to make the best stock. If you want to use the meat in a dish, pull the chicken out after an hour or so, pull the meat off, and then add the bones back in.
Chicken Baby Food
Just because parents are enjoying these chicken thigh recipes, doesn’t mean baby can’t enjoy them, too! This chicken thigh, carrot and cumin baby food puree that I made for my daughter was a huge hit! I made it again with my son, and he loves it, too! I hope these easy chicken thigh recipes inspire you to grab a pack of chicken thighs, and add them to the menu plan for this week.
