You know I’m a big fan of breakfast. In all honesty, my perfect meal is a grand breakfast buffet with all the fixings, spread out for miles in front of me. Pancakes, eggs, sausage, waffles, coffee, donuts, pastries, coffee, crepes, fruit, casseroles and coffee. Please don’t forget the coffee. But, alas, this is not usually my reality. Very, very rarely is it my reality (although maybe you saw on Instagram stories that it was indeed my reality at a food blogging conference last weekend!). On any given day, my morning includes grabbing breakfast for the 2 year old, grabbing breakfast for the 4 year old, almost getting to the coffee maker with my empty mug before having to grab more breakfast for the 2 year old, and then more breakfast for the 4 year old. Maybe 20 minutes after all of this nonsense starts I can get my mug full of life-giving coffee and sit down with my breakfast. Obviously, by the time that happens the kids are done with theirs and are reaching for my plate. I wish I could say that lunch and dinner are different, but often, it’s the same mad scramble. This is where The Sandwich comes in. I think sandwiches are often underestimated. People feel stuck with the same old combinations or struggle to get creative with their fillings. But the humble sandwich has so much more to offer! Obviously, with National Sandwich Day coming next week (November 3!), I had to combine two of my all-time favorite sandwiches into one beautiful, make-aheadable masterpiece. This Denver Grilled Cheese is packed with all kinds of good things: a couple slices of Dempster’s™ Dempster’s 100% Whole grain 12 Grain bread (made with no artificial colours or flavors! Although my husband would make his with the Seed Lovers variety), some good quality ham (don’t kid yourself — go for the Real Deal ham with none of that extra junk), eggs, peppers, green onions and, clearly, a slice of the best cheese you can get your hands on. It is a grilled cheese after all! The beauty of the Denver Grilled Cheese is that you can prep the eggs ahead of time, and store in the fridge or the freezer to pull out any time you need a quick, healthy meal. You can make a big pan to easily serve a crowd, or save some for later in the week. You can improvise and customize with different veggies or different cheeses to suit everyone’s tastes.
